Vegetables High in Antioxidants

Antioxidants are particles that can reverse the damage to tissue caused by oxidation. Oxidation is a normal, naturally occuring process, but its effects can cause problems in the human body. During oxidation free radicals are formed. Free radicals are unstable due to a lack of electrons. Free radicals try to stabilize themselves by stealing electrons from the molecules around them which causes damage to the cells of the human body. A diet rich in foods with high levels of antioxidants has been shown to be able to prevent diseases such as cancer, heart disease, stroke, Alzheimer’s disease, and arthritis. Many foods contain antioxidants; some vegetables have high levels of antioxidants.

Vegetables are an important part of a healthy and balanced diet. There are many health benefits to eating vegetables, one of which is the high level of antioxidants that vegetables contain. Any bright colored vegetable contains some level of antioxidants; but the vegetables with the highest levels of antioxidants are:

Tomatoes

Tomatoes contain high levels of the antioxidant lycopene. Lycopene does an exceptional job of neutralizing free radicals. Research has shown that lycopene is particularly good at promoting a healthy heart. Another study found that consuming high levels of lycopene can help control high blood pressure.

Celery

Celery is a great source flavinoids, which have antioxidant properties. In fact, celery leaves have been found to be comprised of 41-57% antioxidants. Flavinoids are a great protectant against cancer. Cancer cells need blood vessels to grow and spread, but flavinoids inhibit the growth of blood vessels, thus slowing or preventing cancer.

Carrots

Carrots have very high levels of beta carotene, a potent antioxidant. Beta carotene prevents damage to white blood cells, which keeps the immune system healthy.

Bell Peppers

Bell Peppers are packed with antioxidants, including beta carotene. All colors of bell peppers contain the same amount of antioxidants. Studies have shown that the antioxidants in bell peppers prevent the oxidation of essential fatty acids; these fatty acids are essential for proper brain functioning.

Spinach

Spinach is a vegetable with extremely high antioxidant properties. The antioxidants in spinach are believed to be beneficial for many conditions, especially heart disease.
